What a great way to perk up your day! This beetroot and poached egg salad with balsamic is refreshingly good. Of course, the key to this recipe is to first learn how to make the perfect poached eggs.

What you need to do is to add in a pot of water a tablespoon of salt and two tablespoons vinegar. Simmer this pot over medium heat. Crack a fresh and cold large egg into a small ramekin or custard cup. Using the spoon’s handle, quickly stir the water in one direction. Do this until the whole thing is smoothly spinning around. That’s it!
