Here’s one casserole recipe that you just have to try: black bean and butternut squash enchilada. It’s scrumptious, healthy, and very easy to make.

The vegetables are roasted in chili powder and cumin for that intense Southwestern flavor. The other items that you’ll be using to create this incredible dish are corn, salsa, sour cream, red and green bell peppers, mozzarella cheese, enchilada sauce, and corn tortillas.

Serve it hot and fresh from the oven. Or you can also make it ahead, chill in the fridge and just heat it the next day before serving. By that time, the flavors would have meld together more so it tastes even better.
