Looking to break in your new springform pan? If you’re not ready to whip up some cheesecake just yet, a cheesy black-bean tortilla pie would be a good place to start. It’s actually pretty simple and easy to make.
Just think tortilla, beans, cheese. Begin with a layer of tortilla. Spread some of the bean mixture (black beans, onion, jalapeño, garlic, cumin, corn, scallions, salt and pepper) on top. Then sprinkle shredded cheddar cheese. Repeat this three-step process three times. Next put it in the oven for 20 to 25 minutes or until the cheese is melted. Garnish with scallions and serve as sliced wedges along with some chips and salsa.
