Need more potassium and fiber in your diet? This dessert—baked sweet potato fries with a cinnamon sugar coating and a sweet vanilla icing glaze—offers a quick fix and happens to be mouthwatering too. To get them real crispy, the fries are actually tossed in cornstarch after the potatoes are sliced. They are also brushed with melted coconut oil to moisten the sugar and cinnamon mixture that the fries will be coated in next. The coated fries are baked for 18 minutes on one side then flipped to cook for 10 to 15 minutes. Once they’re done, coat them again in cinnamon sugar before dipping them in (or drizzling them with) a glaze of vanilla, cream and confectioners’ sugar. Awesome, right?
