Cucumber and Thyme Shrimp Salad

If there were a contest for appetizers, this would be a top contender for the world’s easiest appetizers to make.

To make this, you’ll need cucumber, shrimp, lemon juice, thyme, salt and pepper. So first, slice the cucumbers thinly. Boil water in a small pot over medium heat. Simmer shrimp with salt and lemon in the pot uncovered.

Wait until the shrimp turns opaque. That takes about 40 seconds. Remove right away and soak in ice water to stop cooking. Chill and drain. Arrange the cucumber and shrimp in layers. Garnish with thyme before serving. It’s that easy!
