French Onion Soup with Asiago & Gruyere Cheese

There’s nothing like a bowl of simmering soup to lift your spirits and warm your heart. Make that a cheesy French onion soup with toasted garlic bread and you get the ultimate comfort food. For this recipe, you’ll need to first caramelize thin slices of red and sweet onions. Once they’re done, stir in water and beef base followed by some wine and Worcestershire sauce. Sprigs of fresh parsley and thyme plus bay leaf go in next (it’s best to keep these bundled with kitchen twine as you’ll be removing them later). Simmer the mixture for 30 or so minutes, then take out the herbs and add balsamic vinegar, salt and freshly ground pepper. Serve the soup with toasted garlic bread, some Asiago cheese and slices of gruyere cheese.

    I use to eat this dish at Henry the 8th before they tore it down. I loved that old job,I worked beside some of the greatest chefs.
