Grilling salmon fillets can get tricky. Once you master the techniques though, you’ll score plus points not just in taste but also in presentation. First up, the glaze. Make a purée out of jalapeño jelly, cilantro, scallions, lime zest and garlic, then melt it all together (along with butter) into a sauce.

Next it’s a matter of grilling the salmon to perfection: glazing both sides of the fillets, placing them on aluminum foil trays, setting the trays on the grill, and letting the salmon cook for 6 to 8 minutes. Garnish with cilantro and lemon and your saucy grilled salmon is ready to serve.
