Thanksgiving dinner isn’t complete without some potatoes. If you have been serving the same potato side dish year after year, it might be time to switch things up, starting with this Hasselback potato treat.
Traditional Hasselback potatoes are made with thinly sliced russet potatoes topped with herbs and bread crumbs before they are roasted. For two to four servings of this tweaked version, you will be needing two sweet potatoes. The stuffing is a combination of 1/4 cup each of diced apple, dried cranberries and chopped pecans, with 2 tablespoons each of Earth Balance butter substitute, maple syrup and applesauce, and 1/2 teaspoon of cinnamon bringing it all together. Pears, raisins, chopped figs, agave and honey can be used as substitutes as well.
