Mornay refers to béchamel sauce with cheese, and a bit of tomato paste that gives it a bright red color. The recipe author shares that she doesn’t usually use commercial breadcrumbs because she makes her own. But for this recipe, you could use Panko breadcrumbs. As for the cheese, you can use cheddar if you like your cheese mild. But if you prefer something with stronger flavor, that’s okay too.
