Lazy weekends are perfect for special breakfast dishes, such as mini hash brown breakfast nests. The nests are actually made from a mixture of shredded potatoes, egg, olive oil, and salt and pepper baked in muffin tins. After 20 to 25 minutes in the oven, take the muffin tins out. Spoon egg yolk into each hash brown cup then add some of the egg white. Pop them back in the oven for 10 minutes. Now fry the bacon rashers and when they’re done fry the mushrooms. In a separate pan, heat the beans. Add the bacon, mushrooms and beans as toppings along with black pepper and chopped chives.
