Appetizers don’t get any easier than this! In this mozzarella roasted bell pepper recipe, you’ll only need a few ingredients. And even if you’ve never tried roasting before, you won’t have any difficulty roasting peppers for the first time.
When you buy the mozzarella, go for one that’s packed in water in a plastic tub. Stay away from the rubbery kind packaged in vacuum sealed plastic. For the ingredients, you’ll need yellow and red bell peppers, fresh mozzarella (ideally same size as cherry), olive oil, fresh basil leaves, salt and pepper. You can also use your favorite seasoning.
