Panko Crusted Zucchini Crisps & Garlic Aioli Dip

This recipe makes unbelievable crunchy zucchini crisps. What’s even more amazing is that you still get to savor the natural juiciness of the zucchinis. How’s it done? Set up an assembly line of three bowls. Mix flour, salt and pepper in the first bowl. Beat two eggs in the second bowl. And add panko bread crumbs in the third bowl. Dip the zucchini pieces in each bowl before sautéing them in a large, nonstick skillet with 1/4 inch of hot oil. Cook them for 3 minutes on each side, and your zucchini chips are ready to be dunked in garlic aioli. To make this dip, simply combine mayonnaise, garlic, lemon juice, salt and black pepper.
