This recipe makes unbelievable crunchy zucchini crisps. What’s even more amazing is that you still get to savor the natural juiciness of the zucchinis. How’s it done? Set up an assembly line of three bowls. Mix flour, salt and pepper in the first bowl. Beat two eggs in the second bowl. And add panko bread crumbs in the third bowl. Dip the zucchini pieces in each bowl before sautéing them in a large, nonstick skillet with 1/4 inch of hot oil.
