Searching for fresh topping combinations for grilled pizza? Try the trio of caramelized onions, Gorgonzola dolce and toasted walnuts. Start by cooking thinly sliced onions in olive oil (seasoned with salt and pepper) until golden. This will be sprinkled over a 12- by 10-inch rectangular pizza dough as it’s being grilled, along with a cup of crumbled Gorgonzola dolce and half a cup of toasted and coarsely chopped walnuts.
Garnish with one-fourth cup of chopped flat-leaf parsley. Once the cheese is partially melted and the underside is golden brown, transfer the pizza from the grill to a cutting board. Serve and enjoy!
