Can’t get enough of potatoes? Here’s another fun potato recipe that you can add to your collection—crispy potato strips seasoned with parmesan cheese and rosemary.

You only need 25 minutes to whip up this fantastic alternative to French fries, and using very few ingredients like russet potato, extra virgin olive oil, salt, parmesan cheese and fresh rosemary.

The first step is to heat a thin layer of olive oil in a pot or Dutch oven. Use a vegetable peeler to make potato strips. Once the oil is hot, layer six to eight strips at a time. Fry until the edges brown and turn crispy. Flip and fry for another minute. Drain in paper towel. Season with salt, rosemary and parmesan cheese.
