Russet Potato Stacks with Lemon Thyme

Here’s a yummy and elegant side dish that would fit perfectly in any holiday menu. And you can have it ready in just an hour! To start off, you’ll need to coat some thinly sliced Russet and yellow potatoes in a mixture of melted butter, extra virgin olive oil, fresh lemon thyme and grated Asiago cheese. Next, layer potato slices in the individual cups of a muffin pan and top with extra cheese. Bake for 40 to 50 minutes, or until its golden brown and crispy on the edges but tender on the inside. Finally, sprinkle a bit of sea salt or coarse kosher salt.

A quick note: Asiago is a hard cheese with a unique salty taste. You can find this in many supermarkets, although you can also use Romano or Parmesan in this recipe.
