To start off, you’ll need to coat some thinly sliced Russet and yellow potatoes in a mixture of melted butter, extra virgin olive oil, fresh lemon thyme and grated Asiago cheese. Next, layer potato slices in the individual cups of a muffin pan and top with extra cheese. Bake for 40 to 50 minutes, or until its golden brown and crispy on the edges but tender on the inside. Finally, sprinkle a bit of sea salt or coarse kosher salt.
A quick note: Asiago is a hard cheese with a unique salty taste. You can find this in many supermarkets, although you can also use Romano or Parmesan in this recipe.
