Russet Potatoes Nachos with Rosemary and Thyme

This recipe is inspired by an episode on the Food Network that featured Irish pub foods. What caught the author’s attention is a pub that served Irish nachos, and since then, she has wanted to make something like it. And so the birth of these nachos with barbecue chicken and queso sauce.

Basically, the process starts with washing and slicing the potatoes into rounds. Then you’ll put them in a big bowl where you’ll mix them with rosemary, thyme, salt, pepper and olive oil. After that, you’ll bake these potatoes in the oven at 450 degrees F for 20 minutes.

Flip and bake for another 20 minutes or until golden brown and crispy. Sprinkle cheese and bacon over the potatoes and return to the oven. Sprinkle with cilantro and green onions and serve with Greek yogurt or sour cream.
