A flavorful marinade can make all the difference. In this case, it’s the lovely combination of bourbon sauce and maple syrup that gives the scallops a sumptuous twist. For a pound of scallops, you’ll need one-fourth cup each of the bourbon sauce and the maple syrup plus some salt and pepper as seasoning. Let the scallops sit in this marinade for 15 to 30 minutes (just don’t forget to lightly score their top and bottom sides in a crosshatch pattern beforehand). Then sauté them for two to three minutes on each side. And voilà, you’re ready to impress with a dish featuring sweet, tender and tasty scallops.
