A light and fruity recipe that’s perfect for summer, this shrimp and asparagus with pear dressing is something that you’d love to make for your family or friends when they come over to your home. The pears were used in the vinaigrette, which used canola oil as a base. Canola oil was chosen so as  to not overpower the flavor of pears.

For the salad, you’ll need baby spinach, shrimp, asparagus stalks, extra virgin olive oil, garlic clove, shallot, cilantro, salt and pepper. For the vinaigrette, prepare prickly pear puree, canola oil, lime juice, honey, green chile, salt and pepper.
