In this recipe, we’re going to use these two things but would add some exciting new twists. For one, you’ll be adding fresh corn and lime crema, and instead of normal potatoes, you’ll be using sweet potatoes. Since sweet potatoes have more nutrients, this can be considered the “healthified” version of your favorite comfort food.
These are the ingredients that you’ll need: sweet potatoes, bacon, fresh corn, red bell pepper, jalapeno, garlic, salt, chili powder, cumin, ground pepper, sour cream, lime juice, extra virgin olive oil, green onions, and fresh cilantro.
