Not exactly a fan of zucchini? This recipe just might make you reconsider, especially when you’re craving for a nice, fresh alternative to French fries and onion rings this summer. Drenched in all-purpose flour, dipped in whisked eggs and then coated in breadcrumbs, these zucchini crisps are incredibly crunchy on the outside and creamy in the center. They are actually fried in batches using a pan coated with olive oil. A minute or two on each side should be enough to get them perfectly golden. Serve with a garlicky yogurt sauce made using Greek yogurt, mashed garlic, water and a dash of salt to taste. Snacking on them is guaranteed to be a delight!
