Zucchini Stuffed with Ground Chicken

If you’re planning a stuffed vegetable dish, do consider zucchinis. They’re super easy to prepare. For one, you don’t need to peel them. And two, you can easily use a spoon to scoop out the flesh even when they’re uncooked. This means you have more time to work on the filling and topping!

In this recipe, the filling combines ground chicken, finely chopped onion and minced garlic, a tablespoon of fresh sweet herb like tarragon or thyme, and chopped zucchini flesh, with salt and pepper as seasoning. For its cheesy topping, sprinkle grated cheddar cheese or spread some Cheez Whiz on the stuffed zucchinis after 10 to 12 minutes of baking. Place them back in the oven until the cheese melts, or for about 30 seconds.
